This summer my garden blessed me with an over abundance of beautiful basil. So what to do with all this basil? Basil pesto of course. Basil pesto is so easy to make. It is perfect as a summer meal with pasta or you can use it as a spread for sandwiches as well as your base for pizza.

Ingredients: 2 cups fresh basil leaves washed and dried. 3/4 cups shredded parmesan cheese, 1/2 cup extra virgin oil. 1/2 cup pine nuts, 2 large garlic cloves, 1/4 cup fresh lemon juice, salt and pepper to taste. Place all ingredients into a food processor and process until smooth. Store in a jar or sealed plastic container up to a week.
